Chef Julio native to San Juan, Puerto Rico, began his culinary career in various hotels on his beloved island. After graduating the prestigious Johnson and Wales University in Providence Rhode Island, Chef Sanchez honed his skills by ways of Dallas Texas. There he showcased his talents at first class restaurant The Green Room and various 5 stars hotels including the Anatole.

In 2004 Chef Julio returned home and joined the Levy family as Executive Chef of the new Coliseum of Puerto Rico. Fueled by his passion for food and music, he quickly emerged as a culinary force showcasing his talents for high profile clientele that included Van Halen, Jennifer Lopez, Usher, and Juan Luis Guerra among other A+ list of clients and Super Stars. To call Chef Sanchez a barbeque enthusiast is an understatement. During his tenure in Puerto Rico, he served as a board of directors for the Caribbean Barbeque Association hosting several contests and food festivals around the island.

Chef Sanchez has lend support many Levy venues including US Open in Queens New York, Kentucky Derby Churchill Downs, PGA Golfing, NASCAR Racing, Boston Convention & Exhibition Center in Massachusetts, Miami Marlins Park in Florida, EverBank Field in Jacksonville Florida and Portobello Disney in Orlando Florida. Chef Julio has also opened Two Soccer stadiums in Mexico: Torreon, Santos Estadio Modelo and Guadalajara, Chivas, Estadio Omnilife.

In 2010 Chef Sanchez joined the American Airlines Arena team bedazzling the Suites and Loges clients with his 22 years of experience and belief on cooking with the best and freshest ingredients using classic and new techniques to create modern global fusion cuisine.
